Ingredients
1 3/4 - 2 cups chicken broth (Pacific Foods Organic
Chicken Stock is a great one!)
1 small onion
1/3 cup flour
4 tablespoons butter
1/2 teaspoon pepper
1/2 teaspoon salt
2 cups milk
2 cups shredded sharp cheddar cheese
1/2 cup shredded Swiss cheese
2 - 3 cups (approx) chopped broccoli
1-2 cups shredded carrots
Directions
Chop your onion, carrots and broccoli.
Chop Chop!
In Dutch oven, simmer your chicken stalk and onions. Simmer
for 10-15 minutes or until onions are soft.
Add your broccoli and carrots light coat them with the
chicken broth mixture. Then cover and let the broccoli and carrots steam.
In small sauce pan melt butter, add your flour, salt and pepper,
whisk together until you get a roué. Slowly whisk in your milk. Set the temp at
low and let thicken.
While you let your milk mixture thicken grate your cheese!
Mmmmmm! Cheese!
Add your milk mixture to your chicken stock mixture. Stir
until combined.
Add your cheeses, stirring until completely melted.
Remove from heat and ENJOY!
P.S. if you don't have Swiss Cheese or Sharp Cheddar, use whatever you have.
It wont taste the same but it will still be delicious!
